Menu Plan Monday: first week of school menu!

My kids head back to school this week!  Football season has also  started for us, which means that my son has football price for almost 2 hours three nights a week.  My daughter also has swimming practice 4 nights a week for an hour, so it’s some crazy times around our house! Since it’s 100 degrees outside, we don’t want “heavy” dinners, and I don’t want to wait until after practice and feed my kids at 9 pm either, so here are some quick fixes for busy nights!

SUNDAY:  Lasagne  The night before school starts, our tradition is to have a “Back to School Dinner”  The kids pick out a favorite meal and we talk about goals for the upcoming school year.  This week it was lasagne!

MONDAY:  Slow Cooker Cream Cheese Chicken  I love this recipe because I can dump all of the ingredients in the crockpot and it does all the work.  Plus, the sauce is SOO yummy that you’ll want to lick your plate clean!

TUESDAY:  Chicken Quesadillas – My son has football for 2 hours on Tuesday nights and my daughter has swimming for an hour.  I try to plan quick and easy recipes that will get them fed, but won’t weigh them down.  This is a great way to use up leftover chicken meat, too!

WEDNESDAY:  Slow Cooker Pulled Pork Burritos – One of these days, I will actually get this recipe written up, but it’s seriously SO EASY!  I throw a pork roast in the crockpot with a can of red enchilada sauce (the smaller size) and some taco seasoning!  I cook on low for 6-8 hours, shred the meat, and add beans and other taco “fixings”

THURSDAY:  Country Style Macaroni & Cheese – Almost as easy as making it from a box and my kids LOVE it!

FRIDAY:  Tasty Baked Tacos  – This is one of my favorite Friday “go to” recipes because it requires minimal effort!

SATURDAY: Cheesy Baked Ravioli – Another easy, budget friendly recipe!

Menu Planning Monday: Quick fixes for busy nights!

SUNDAY: Spaghetti – Sometimes easy is best, but sometimes I forget that!  My family devoured the spaghetti last night, and as an added bonus, my husband cooked 🙂

MONDAY:  Slow Cooker Black Bean & Chicken Burritos – A SUPER EASY Dump & Go Slow Cooker Recipe your family will LOVE!

TUESDAY:  Pasta Salad – Perfect for a busy night.  It’s got veggies, protein, and more!  Plus, it’s easy to throw together!  Recipe to come!

WEDNESDAY:  Chicken Wraps – I grab some Spinach wrap size tortillas plus the pre-grilled chicken and a bag of Caesar salad mix.  I mix the chicken and Caesar salad mix together and fill the tortillas.  Super easy, not overly filling (it’s a football night) and the kids love it!

THURSDAY:  Slow Cooker Chicken Ranch Tacos – In case you haven’t noticed, I’m all about keeping it simple!  This is another “dump and go” slow cooker recipe!  We always have leftover chicken that I can use for taco salads or other things throughout the week, too!

FRIDAY:  Easy Cashew Chicken – We haven’t had this one in awhile, but it’s a great way to save some cash when you’re craving take-out!

SATURDAY:  Date Night – My mother in law is in town, which means my husband and I actually get a rare date night!  We will probably order kids for her and the kids!

SUNDAY:  Country Style Macaroni & Cheese –  This is ALWAYS, always a family favorite!  I hadn’t planned on making it last night, but when I asked my family what they wanted, the choice was unanimous!

MONDAY:  Slow Cooker Black Bean & Chicken Burritos  – Both of my kids have swimming tonight, and we have a busy day, so this is a perfect “dump and go” quick fix recipe and it tastes so yummy!

TUESDAY:  Slow Cooker Chicken & Rice  I have yet to blog this one, but it’s quick and easy and hopefully I will get around to blogging it THIS time around!

WEDNESDAY:  Slow Cooker Hobo Stew This is definitely not a “traditional” summer recipe, but it’s very easy to throw together and I KNOW that my kids will eat it, so it works for us!

THURSDAY:  Bubble Crust Pizza – I love giving my kids the chance to help in the kitchen and this recipe is totally kid friendly!

FRIDAY:  Bourbon Chicken Kid friendly and YUMMY!  Dinner in 30 minutes!

SATURDAY:  Slow Cooker French Dip Sandwiches My most popular recipe this month and SO easy to throw together!

My summer vacation has FINALLY started!  I don’t want to waste time cooking (and it’s too hot for that anyway), and we are at the end of the month (which means the end of our grocery money, too), so here are some quick fix and budget friendly casserole ideas to get you through the month!

SUNDAY:  Slow Cooker Coke MeatballsThese were so easy to throw together and my husband and son both commented that they wishes there had been more of them!  Point taken for next time!   I used Coke Zero for mine.  I will share all of my variations in a post this week!

MONDAY:  Slow Cooker Melt in Your Mouth Meatloaf – This is always a favorite, even with my picky eaters.  We never have anything left over!

TUESDAY:  Chicken Bacon Ranch Pasta – This is a new recipe for us, but I figure it’s all of my children’s favorite things in one dish, so how could I go wrong?

WEDNESDAY:  Chicken Enchilada Casserole – I’ve got to get a Mexican food “fix” at least once a week and this is a quick and easy way to do it!

THURSDAY:  Tator Tot Casserole – I’m trying to keep it simple (and cheap this week since we’re at the end of the month).  I haven’t made this in years and I’m combining things from a few different recipes.  I’ll let you know how it turns out!

FRIDAY: Lemon Chicken Saute – In my house, we refer to this as “Grandma’s Chicken” because it’s a recipe my husband’s grandmother makes.  It’s yummy and easy for summer!

SUNDAY:  Spaghetti – I asked my husband and dad what they wanted for their Father’s Day dinner and they chose spaghetti!  I’m not complaining.  Sometimes it’s nice to keep things simple.

MONDAY:  Slow Cooker Turkey Chili  Even though I’m done with work now, sometimes it’s nice to have dinner ready for you at the end of the day without putting a whole lot of effort into it (or having much to clean up)

TUESDAY: Slow Cooker Cream Cheese Chicken Yes, you read that right.  CREAM CHEESE.  How could you go wrong?  Plus, it’s a slow cooker recipe, so it’s an added bonus!  This recipe is a family favorite and it’s been a LONG time since I made it.  People have been known to lick their plate clean..it’s that good.

WEDNESDAY:  Slow Cooker Coke Meatballs – I have figured out that my family loves pretty much anything involving meatballs. When I find something that I can feed to everyone without any complaints, I go with it! This is a new recipe we’re trying out this week.

THURSDAY:  Grilled Cheese Sandwiches & Tomato Soup – keeping it simple!

FRIDAY:  Taco Salad – This is a recipe my mom always used to make growing up that’s perfect for those hot summer months.  I realized that I hadn’t made it in years.  Recipe to come!
