Menu Plan Monday: kid friendly low carb recipes!

We survived our first week on a low carb menu.  I have discovered that the key is to involve your kids in the menu planning and to choose some of their favorites.  When I asked my kids how they thought our first week went, they said they thought it went great!  When I asked them if there were any recipes they actually hated, they said no!  This is a HUGE bonus considering that my son is a picky eater!  Here’s this week’s round up of Kid Friendly Low Carb Recipes.

Kid Friendly Low Carb Recipes

SUNDAY:  Crock Pot Roast – This was a super easy roast recipe that I will have for you soon and I even tried my hand at making low carb mashed cauliflower.

MONDAY:  Cheesy Low Carb Broccoli and Cauliflower Soup – Broccoli cheese soup is a favorite and I was excited to find this recipe on Kalyn’s Kitchen!  I can’t wait to try it out.  We’ll be making some Low Carb Oopsie bread to go with it.  This morning, we’re trying out Low Carb Cream Cheese pancakes for breakfast, too!

TUESDAY:  Fajitas with homemade guacamole – It’s a football and swimming night, so we need a quick fix meal.  I buy the pre seasoned fajita meat and cook it on my Lodge Cast Iron Grill pan!  I bought low carb tortillas last week, but we actually loved eating the fajitas with the veggies, guacamole, and sour cream and no tortillas!

WEDNESDAY:  Low Carb Cream Cheese Stuffed Meatballs – How can you go wrong with meatballs stuffed with cream cheese?  This recipe from Ditch the Carbs looks amazing!

THURSDAY:  Sauerkraut & sausage – it’s another busy night with football and swimming, so we’ll be having sauerkraut and beef kielbasa sausage.

FRIDAY:  Low Carb Pepperoni Pizza Chicken Bake – I am LOVING the recipes I’m finding on Kalyn’s Kitchen.  She’s got stuff that’s totally kid friendly and right in sync with what my family loves!  In honor of the end of a week, I’m also going to try out this recipe for flourless brownies!

SATURDAY:  Chicken Taco Salad – Tonight I’m going to use my Slow Cooker Chicken Ranch Tacos recipe to make chicken taco salad!

Menu Plan Monday: Starter Low Carb Recipe Ideas!

My kids have activities EVERY single week night this week (including Friday), which means I have limited time at home to cook before we start running around for the night! Because I’m a little crazy I’ve decided to start low carb eating this week, too.  I know that in order to be successful, my ENTIRE family would need to participate and to get the kids on board, I got them involved with the menu planning this week.

SUNDAY:  Low Carb Sausage Breakfast Muffins – I am used to grab and go breakfasts like cereal or Jimmy Dean breakfast sandwiches.  These Low Carb Sausage Breakfast Muffins were SO easy to make and now I’ve got some left to microwave throughout the rest of the week!

MONDAY:  Chicken veggie stir fry and egg drop soup  – Super easy to make – I just cook the chicken in soy sauce and add in our favorite veggies (tonight will be fresh green beans, broccoli, celery, and a few carrots).  The egg drop soup is easy, too!  All you need is chicken broth and eggs!

TUESDAY:  Chicken fajitas with homemade guacamole, sour cream, and low carb tortillas – I’ll be making these with my new Lodge Cast Iron Grill pan!

WEDNESDAY:  Green Chile Mock Enchilada Casserole – I LOVE Mexican food and one of the thing I was most worried about in starting this low carb adventure was having to give it up completely.  I’m so glad I’ve been able to find some low carb alternatives and this Green Chile Mock Enchilada Casserole from Kalyn’s Kitchen looks like a WINNER!

THURSDAY:  Ham Cauliflower Cheese Bake – My kids LOVE macaroni and cheese.  I found this recipe on Kalyn’s Kitchen again and I’m hoping I can convince my son especially that it’s a good alternative 🙂

FRIDAY:  Low Carb Pizza – Friday nights have often turned in to “pizza” nights.   This low carb pizza recipe from Ditch the Carbs has gotten rave reviews and we can’t wait to check it out!

SATURDAY: Slow Cooker Kahlua Pork – I’ve tried variations of this recipe in the past.  The hardest part will be eating it without the rice!  We got this recipe from Nom Nom Paleo.

SUNDAY:  Rice Meatballs – I got this recipe from my mother in law several years ago.  It’s a family favorite and super easy to throw together when you don’t have much time!  Add some spaghetti noodles and a veggie and you’ve got dinner.

MONDAY:  Slow Cooker Creamy Chicken Noodle Soup  – This is the perfect comfort food and SO easy to make because you throw all of the ingredients into the slow cooker!

TUESDAY:  Slow Cooker Turkey Chili – all dump and go ingredients!  Seriously the easiest recipe ever!

WEDNESDAY:  Quesadillas – quick and easy way to use up left over shredded chicken!

THURSDAY:  Slow Cooker Chicken & Dumplings – More comfort food for us!  I’ve been using this recipe for years!

FRIDAY:  Tasty Baked Tacos – This is a Friday night favorite!  Tacos you can bake in the oven!

SUNDAY:  Slow Cooker Chicken Tortilla Soup – Even though it was almost 100 degrees outside, I still made this family favorite because we love it!  And that’s what AC is for, right?

MONDAY:  My parents are taking me out for an early birthday dinner tonight!

TUESDAY:  Tasty Baked Tacos – This is always a favorite and you can throw it together really quickly!

THURSDAY:  Quesadillas – I will be using canned chicken for these to make it quick and easy!

SUNDAY:  Easy Pepper Steak – This pepper steak recipe is so easy that even my 11 year old daughter can make it!  We never have leftovers because it’s so good!

THURSDAY:  Chicken Fajita Tacos – My son has football practice tonight, so I buy the pre-grilled chicken fajitas and we make tacos.  So easy!
