Super Easy Ham Glaze!

I’ve been spoiled because my parents usually cook Easter dinner, but they were out of town this year, and I was left to my own devices! This is a super easy ham glaze that I used and it was so yummy!

Super Easy Ham Glaze!

Serves: 6-8
 

Super Easy ham glaze recipe
Ingredients
  • 1 ham (I used a Hormel Cure 81 boneless ham)
  • 1 cup packed brown sugar (light or dark should work)
  • 2 tablespoons Dr. Pepper (or any other cola drink)
  • 1 tablespoon yellow mustard

Instructions
  1. Line a large pan with aluminum foil.
  2. Score the top of the hand by making diagonal cuts across the top. Place ham in the center of the foil.
  3. Mix together the Dr. Pepper, brown sugar, and mustard, and brush half the glaze over the top.
  4. Wrap the ham up in the foil and bake for 20 minutes per pound at 350 degrees.
  5. Open the foil and brush the remaining glaze over the top. Bake 20-30 minutes longer.
  6. Remove and allow to cool for 10-15 minutes. Slice and serve!

Ham will be a part of our Easter dinner this year and I know we will have leftovers!  I hate to let food good to waste, so I’ve got some yummy plans for our leftovers!  If you’re wondering what to do with leftover ham, here’s a round up of leftover ham recipes.  Each of these recipes is a tried and true recipe for leftover ham that my family LOVES!

Country Style Macaroni and Cheese  – My kids would have me make this every week and perhaps multiple times a week if I would agree to it, so this is definitely a kid friendly pick!  It’s a macaroni and cheese recipe that is super easy to throw together, too!

Creamy Corn Chowder  – This recipe actually calls for bacon, but I’ve made it before using leftover ham and it’s just as yummy!

Easy Sweet & Sour Pork  – I got this recipe from my mother in law shortly after I was married and it’s another kid friendly recipe that’s easy to throw together!  You can also use your leftover ham to make yummy ham fried rice!

Slow Cooker  Baked Potato Soup – This recipe also calls for bacon, but when you substitute ham it’s just as yummy!

Menu Planning Monday: My menu for the week of 3/24

This week is going to be a busy one, so I mainly chose my tried and true quick fix and slow cooker recipes!

SUNDAY:  Country Style Macaroni and Cheese Recipe – This is a long time family favorite and a GREAT way to use up leftover ham!

MONDAY:  Slow Cooker Chile Colorado burritos – I discovered this recipe on Pinterest and it has become a family favorite.  I could make it once a week and no one would complain!

Cheesy-Baked-Ravioli

TUESDAY:  Cheesy Baked Ravioli – This is a “quick fix” meal that’s easy to throw together when you don’t really feel like cooking!  You can’t go wrong with Ravioli!

WEDNESDAY:  Melt in Your Mouth Meatloaf  – Yes, it’s meatloaf and yet it’s a hit every time I make it…one of those recipes I can never go wrong with!

THURSDAY:  Crockpot chicken and rice – I came up with this recipe after experimenting a bit and couldn’t come up with a more original name.  It’s yummy and easy to make!

Ingredients:
2-3 frozen chicken breasts
1 pkg McCormick Zesty Herb chicken seasoning blend (sometimes I substitute the Good Seasonings Italian dressing blend if I have it on hand)
1 can cream of chicken soup
2 c. hot cooked rice
Grated cheese
Tomatoes
Celery
Bell peppers

Place frozen chicken breasts in the bottom of the crockpot. Mix ingredients for McCormick seasoning according to directions on the packet and pour over the top of chicken. Cook on low for five hours. Shred chicken in crock pot using a knife and fork. Add cream of chicken soup. Let cook for one more hour. Service over rice with additional toppings as desired (we add cheese, celery, tomatoes, bell peppers, etc. depending on what we have on hand).

FRIDAY – Tasty Baked TacosA quick and easy recipe to round out the week!  This has become a family favorite!

SATURDAY:  Slow Cooker Garlic Pesto chicken – I found this one on Pinterest and it looks SO YUMMY!  I can’t wait to try it!

Country Style Macaroni and Cheese Recipe

country-style-macaroni-and-cheeseI first discovered this recipe on a Babycenter.com Cooking for Your Family message board several years ago.  It has become one of my kids favorite recipes.  They choose it for birthdays, back to school dinners, and any time that I ask for their input on our weekly menu.  It’s also a great way to use up extra ham!

Here’s how you can make Country Style Macaroni and Cheese:

Country Style Macaroni and Cheese Recipe

Quick and Easy Macaroni & Cheese Recipe!
Ingredients
  • 1 lb country ham slices or regular smoked ham in one piece (I just use whatever leftover ham we have on hand)
  • 1 lb elbow macaroni (I use whole wheat)
  • 2 cups shredded extra sharp cheddar cheese (8 oz) (I use reduced fat)
  • 1 cup sour cream (I use reduced fat)
  • 1 can cream of chicken soup (I use 98% fat free)
  • ¼ cup (1/2 stick) margarine, melted (I don’t use this when I make it)
  • 1 cup dry plain bread crumbs
  • 1 tsp diced onions or onion powder
  • 1 tsp garlic salt
  • salt and pepper to taste

Instructions
  1. Pre-Heat oven to 400º.
  2. Bring 4 quarts water to boiling in large pot. Once water begins to boil,
  3. add macaroni to pot. Return water to boiling and cook 8 minutes, stirring occasionally.
  4. While the macaroni noodles are cooking, coarsely chop the ham.
  5. Drain macaroni.
  6. In a large mixing bowl, combine macaroni, ham, ½ of the cheese, sour cream, soup, onion powder, garlic salt, and salt and pepper. Mix well.
  7. Place the mixture in a 13X9 baking dish. Sprinkle the remaining cheese over the top and then sprinkle with bread crumbs.
  8. Bake at 400º for 30 minutes or until heated through and top is golden brown.
  9. Let stand 5 minutes before serving.

SUNDAY:  Rice Meatballs – I got this recipe from my mother-in-law when I was first married.  It’s a tried and true family favorite that’s super easy to throw together!

MONDAY:  Chicken Lickin’ Good Pork Chops – This is a super easy slow cooker pork chops recipe!  I usually serve it with a side of mashed potatoes and corn.

TUESDAY:  Stacked Green Chicken Enchiladas  This is a twist on a recipe my dad used to make when I was growing up.  I love it because it’s easy to throw together on nights when we’re busy, busy, busy!

WEDNESDAY:  Melt in Your Mouth Meatloaf  – Yes, it’s meatloaf and yet it’s a hit every time I make it…one of those recipes I can never go wrong with!

THURSDAY:  Chicken ranch tacos (slow cooker) – I made this recipe last week and we loved it so much that I decided to make it again this week!  It’s a totally easy “dump and go” recipe, too!  I’m all about simplifying things this week!

FRIDAY:  Country Style Macaroni Casserole – Every time I ask my family to help out with menu planning and give me recipe suggestions, this is always one of the things they choose.

Ingredients:

1 lb country ham slices or regular smoked ham in one piece (I just use whatever leftover ham we have on hand)
1 large onion, diced
1 lb elbow macaroni (whole wheat)
2 cups shredded extra sharp cheddar cheese (8 oz) – I use reduced fat
1 cup sour cream (I use reduced fat)
1 can cream of chicken soup (I use 98% fat free)
1/4 cup (1/2 stick) margarine, melted (I don’t use this when I make it)
1 cup dry plain bread crumbs

1. Heat oven to 400º.
2. Bring 4 quarts water and ham to boiling in large pot. Once water begins to boil,
remove ham to a plate. Add onion and macaroni to pot. Return water to boiling; cook 8 minutes, stirring occasionally.
3. Coarsely chop ham, discarding any fat and bones.
4. Drain macaroni and onion and return to pot. Add ham, cheese, sour cream and soup. Scrape into a 13x9x2 baking dish. Pour melted margarine over top. Sprinkle with bread crumbs.
5. Bake in heated 400º oven 30 minutes or until heated through and top is golden brown.
Let stand 5 minutes before serving.

Note: Prepare in two 8×8 casserole dishes, bake one and freeze one (unbaked) for another day. If freezing, top with crumbs and margarine right before baking.
