Chicken Tortilla Bake Recipe

I’m always looking for new enchilada or Mexican-style recipes, and I came across something similar to this a few months ago and have been meaning to try it.  My family enjoyed it, but I think next time I will add some green enchilada sauce into the mixture (the recipe did not call for this, but I think it would have given it an extra “kick”).

Chicken Tortilla Bake Recipe

Easy Chicken Tortilla Bake Recipe
Ingredients
  • 2-3 boneless, skinless chicken breasts
  • 12-15 corn tortillas
  • 1 can Ro-Tel
  • 1 can cream of chicken or cream of mushroom soup
  • 1 can green enchilada sauce (optional)
  • 1 can black beans or pinto beans, rinse (optional)
  • 8 ounces of shredded cheese (we use cheddar or Colby Jack)

Instructions
  1. [center][/center]
  2. Pre-heat the oven to 350 degrees.
  3. Cut chicken into pieces and brown in a skillet.
  4. After the chicken is thoroughly cooked, add in the cream soup, enchilada sauce, Ro-Tel, and beans, and mix well.
  5. Cut tortillas into small 1 inch strips (I used a pizza cutter to do this). Layer 3-4 tortillas along the bottom of an 8X8 baking dish. Pour some of the chicken mixture to cover the layer, add another layer of tortillas, and repeat until you have used all of your tortillas and chicken mixture.
  6. Bake covered for 20 minutes in at 350 degrees. Sprinkle the cheese over the top and bake uncovered for an additional 10 minutes


 

 

Baked Spaghetti Recipe

This was not on my menu plan this week, but it was inspired at the last minute due to some Pinterest browsing.  It was quick and easy to throw together and I had all of the ingredients on hand!  If you’re looking for a budget friendly recipe, this is it!  If you had to buy the ingredients, you should be able to get everything for about $5-6!

This recipe takes me back a few years when my kids were younger and couldn’t quite say “spaghetti” so it came out “pasketti”  This recipe is in fact a bit like “pasketti” because it’s a combination of Pizza and Spaghetti baked!  We added the pizza toppings just for fun, but you could definitely just do it with the cheese and I’m sure it would be just as yummy.  If you saw my recipe for Bubble Crust Pizza last week, you may be thinking this is the same thing (I know that’s what my kids thought when I pulled it out of the oven).  It’s not quite the same, but it is completely kid friendly and my husband, who is sometimes pickier than the kids when it comes to trying new recipes, gave it two thumbs up and said it was a “keeper.”  As an added bonus, we’ve got leftovers for lunch!

Baked Spaghetti Recipe

Kid friendly and easy to prepared baked spaghetti recipe
Ingredients
  • 1 package spaghetti noodles (we used whole wheat)
  • 1 bottle pasta sauce (or you can prepare your own)
  • Pizza toppings (optional, we used sausage and turkey pepperoni)
  • Shredded cheese (pizza blend, Italian blend, mozzarella, etc.)
  • Italian seasoning

Instructions
  1. Preheat oven to 375 degrees
  2. Cook spaghetti noodles and rain
  3. Spread spaghetti noodles across a 9X13 baking dish
  4. Cover with the pasta sauce and mix together in the baking dish
  5. Add shredded cheese and toppings
  6. Sprinkle Italian seasoning over the top
  7. Cover with foil and bake at 375 degrees for 30 minutes. Remove foil and bake for 10 more minutes
  8. Let it sit for 5 minutes. I cut mine into squares with a knife before serving.

Easy Sausage & Cheese Breakfast Bites

I saw this recipe on Pinterest and had to check it out.  First, it only has 3 ingredients, so how can you go wrong?  PLUS, it has sausage, cheese, and crescent rolls…3 things my family loves!  So again, how can you go wrong?  I made this for breakfast for our family yesterday and everyone gave it two thumbs up!  It was SUPER easy to make, too, which is always a plus for me!  This is a great one for Sunday mornings and would even be great for a Christmas morning breakfast!

Easy Sausage & Cheese Breakfast Bites

Easy Sausage & Cheese Breakfast Bites

Easy Sausage & Cheese breakfast with only 3 ingredients!
Ingredients
  • 1 lb breakfast sausage
  • 1 8 oz package cream cheese (I use ⅓ less fat variety)
  • 2 package crescent rolls (I use reduced fat)

Instructions
  1. Brown the sausage in a pan and then drain. Add in cream cheese and cook until the cream cheese is melted and well mixed.
  2. While the sausage is cooking, preheat the oven to 375 and layer a cookie sheet with aluminum foil (you don’t HAVE to do this, but it makes life easier). Unroll the first crescent roll package in the center of the cookie sheet.
  3. Spread the sausage mixture over the crescent rolls. Leave a border around the edges so you can “seal” it.
  4. Once you have the sausage mixture spread out, unroll the second package of crescent rolls over the top and press it to seal.
  5. Bake at 375 degrees for 20 minutes.
  6. Cut into squares and serve.

Bubble Crust Pizza Recipe

Fun cooking with kids recipe! Make pizza using refrigerated biscuits!
Ingredients
  • 1-2 cans refrigerated biscuits (Homestyle, not flaky layers – I only needed 1, but it depends on the size of the can)
  • Pizza sauce
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar or colby jack cheese, shredded
  • Italian seasoning
  • Pizza toppings of choice (we used pepperoni and sausage)

Instructions
  1. Preheat the oven to 350 degrees.
  2. Spray a 9X13 baking pan with nonstick cooking spray
  3. Cut biscuits into pieces and place along the bottom of the baking pan until the entire surface is covered.
  4. Spread pizza sauce over the top.
  5. Cover with mozzarella cheese.
  6. Cover with toppings of choice.
  7. Cover with colby jack cheese.
  8. Sprinkle Italian seasoning over the top
  9. Bake, uncovered, for 35 minutes or until the top is golden and bubbly (check the dough in the center to make sure it is cooked through)

Ingredients
  • 1 cup strawberries (sliced)
  • 1 cup blueberries
  • Cream Cheese (I used the ⅓ less fat variety)
  • Bread

Instructions
  1. Toast the bread
  2. Spread cream cheese over the toasted bread
  3. Create a pattern with blueberries in the upper left hand corner
  4. Add strawberries to make the “stripes” (I have also seen people use strawberry jam for this part)
