Tasty Treat Tuesday: Valentine’s Day Red Velvet Trifle

Valentine's trifleI can’t believe that Valentine’s day is in two days!  I am so unprepared this year.  Luckily, I just found our Valentine’s Day dessert.  Doesn’t this Red Velvet Trifle look delicious?  I think I found something that everyone in my family will appreciate.   Who doesn’t like chocolate pudding and chocolate mousse?  Thanks Super Sweet Life!

Here’s what you need to make this:

For the Cake

  • 1 package red velvet cake mix
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup + 2 Tbsp milk

For the Mousse

  • 2 1/2 cups heavy whipping cream
  • 10 oz dark chocolate chips (or chopped chocolate)

For the Pudding

  • 1 1/2 cups heavy whipping cream
  • 1/2 cup half and half or milk
  • 3 large egg yolks, preferably at room temperature
  • 8 oz semisweet chocolate chips (or chopped chocolate)

Tasty Treat Tuesday: Snickers Brownie Bites

Here’s what you need to make these:

  • 1 box brownie mix, plus ingredients on back of box
  • 1 jar marshmallow fluff
  • 1 cup smooth peanut butter
  • 1 pkg Kraft caramels, unwrapped
  • 1 Tbsp heavy cream
  • 1 & 1/4 cup dry roasted peanuts
  • 1/2 pkg chocolate Candiquik or milk chocolate almond bark

Tasty Treat Tuesday: Churro Waffles

My husband and I absolutely love churros!  My fond affection for these delicious treats began when I was very young, but my husband didn’t have the pleasure of tasting one until our Honeymoon at Disneyland.  Once he took his first bite, there was no going back.  We had churros with every meal for the next three days!  Unfortunately, churros are not really the kind of thing that you can easily whip up at home so we haven’t really had many over the last ten years.  I am excited to try out this recipe for Churro Waffles.  They look so yummy and just might be the perfect thing to cure my frequent churro cravings.  Thanks Chica Chocolatina Bakeshop!

For the waffles:

  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1 1/2 cups warm milk
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 3shakes  of cinnamon plus

For the churro topping

  • 1 cup of white sugar
  • 1/2 cup cinnamon
  • 1/2 cup of melted butter

Tasty Treat Tuesday: Pecan Pie Cake

pecan pie cakeThis one is for all the pecan pie lovers out there.  This pecan pie cake looks divine!  Just look at that gooey filling and moist cake!  I don’t even really care for pecan pie and I still want to eat this.  I usually only look for recipes that are quick and easy, and this is definitely not that, but I think it is well worth all that extra work.  Thanks Sweet Jeanette!

Here’s what you need to make this:

For the filling:

  • 1/2 cup firmly packed dark brown sugar
  • 3/4 cup dark corn syrup
  • 1/3 cup cornstarch
  • 4 egg yolks
  • 1 1/2 cups half-and-half
  • 1/8 tsp salt
  • 3 TBSP butter
  • 1 teaspoon vanilla extract (the real stuff)

For the cake:

  • 3 cups finely chopped pecans, toasted and divided
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 2 cups sugar
  • 5 large eggs, separated
  • 1 TBSP vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 cup buttermilk
  • 3/4 cup dark corn syrup

Tasty Treat Tuesday: Cinnamon Apple Chimichangas

I came across this recipe this morning and I still haven’t stopped drooling.  These apple cinnamon chimichangas look absolutely delicious.  I was a little worried they would be hard and time consuming to make but they are actually fairly easy to make and call for very few ingredients, most of which I already have on hand.   Thanks Juanita’s Cocina!

Here’s what you need to make this dessert:

For the Apple Pie Filling

  • 4 baking apples, chopped (I used a mix of granny smith and gala apples)
  • 1 1/2 cups water
  • 1/4 cup cornstarch
  • 3/4 cup sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 Tbs. lemon juice

For the Chimichangas

  • 8-10 small tortillas
  • 1/2 cup sugar
  • 1 Tbs. cinnamon
  • Oil for frying
