Tasty Treat Tuesday: Eclairs

My husband loves eclairs so he is super excited about this recipe!  I’ve never made eclairs before, thinking they were too hard to mkae, but this recipe actually seems doable.  Thanks Ana at Hidden Ponies for sharing!

Here’s what you need to make them:

CHOUX PASTRY:

  • 1/2 cup butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs

CUSTARD FILLING:

  • 1 (4 serving size) package instant vanilla pudding mix
  • 2 cups milk (or as called for on pudding package)
  • 1 cup heavy cream
  • 1/4 cup icing sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

CHOCOLATE ICING:

  • 2 oz semisweet chocolate (or 1/3 cup semisweet chocolate chips)
  • 2 Tbsp butter
  • 1 cup icing sugar
  • 1 tsp vanilla extract
  • 3 Tbsp hot water

Tasty Treat Tuesday: Strawberry Pretzel Squares

I just finished my grocery shopping for the week and got an awesome deal on fresh strawberries.  Needless to say, I have strawberries on the brain so I went on the hunt for some dessert recipes to use them up before they go bad.  That is how I found this yummy recipe for Strawberry Pretzel Squares from Kraft Foods.

Here’s what you need to make these:

  • 2 cups finely crushed pretzels
  • 1/2 cup sugar, divided
  • 2/3 cup butter or margarine, melted
  • 1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
  • 2 Tbsp. milk
  • 1 cup thawed COOL WHIP Whipped Topping
  • 2 cups boiling water
  • 1 pkg. (6 oz.) JELL-O Strawberry Flavor Gelatin
  • 1-1/2 cups cold water
  • 4 cups fresh strawberries, sliced

Tasty Treat Tuesday: Flourless Chewy Chocolate Cookies

My in-laws are headed back for another visit so I am on the hunt for some good gluten-free recipes to make while they are here.  These cookies look so good!  Most of the recipes I have tried for flourless cookies tend to be hard and crunchy which is so not how I like my cookies to be.  I am excited to try this recipe out and see what happens!  Thanks to Lori at Recipe Girl for the recipe!

  • 3 cups powdered sugar
  • 2/3 cup unsweetened Dutch-process cocoa powder
  • 1/4 teaspoon salt
  • 2 to 4 large egg whites, at room temperature
  • 1 Tablespoon pure vanilla extract
  • 1 1/2 cups bittersweet chocolate chips

Tasty Treat Tuesday: Chocolate Covered Brownie Ice Cream Sandwiches

I was feeding my daily pinterest addiction, browsing through other people’s pins, when I saw this picture.  These ice cream sandwiches looked so delicious I just had to share!  Thanks to Katie at Good Life Eats for creating such a yummy dessert!

Here’s what you need to make these:

For the Brownies:
1 stick (8 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
2 tablespoons cocoa, plus more for pan
2 eggs
1 teaspoon pure vanilla extract
3/4 cup flour
pinch of kosher salt

For the Ice Cream Sandwiches:

1 quart vanilla ice cream, slightly softened
2 pounds chocolate chips
1 teaspoon oil

Tasty Treat Tuesday: Homemade Snickers Bars

My all-time favorite candy bars are Snickers.  I absolutely love them!  I was so excited to find this recipe for homemade snickers bars.  I can’t wait to try it out.  Thans How Sweet Eats for the recipe!

Here’s what you need to make these:

Top and bottom chocolate layers  (measurements are per layer)

  • 1 1/4 cups milk chocolate chips
  • 1/4 cup peanut butter

Nougat layer

  • 1/4 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup evaporated milk
  • 1 1/2 cups marshmallow fluff
  • 1/4 cup peanut butter
  • 1 1/2 cup salted peanuts chopped, roughly chopped
  • 1 tsp vanilla extract

Caramel layer

  • 1 14-ounce bag of caramels
  • 1/4 cup whipping cream
