Tip of the Day Tuesday: Adopt a Soldier

Today’s “Tip of the Day Tuesday” will be a little bit different from others I have posted. Instead of giving you tips about how to use coupons or save more, I’m going to share a tip about how you can use what you already have to help others.

If you’ve been using coupons for awhile, then you have probably accumulated a nice stockpile of health and beauty items…..probably more than you and your family could ever use! If you have an overstock, there are many things you can do with it.

One of the things you can do is “adopt a soldier.”

Some of the “requested items” which you may have sitting around in your stockpile include:
*dental floss

*toothpaste
*toothbrushes
*baby wipes
*nasal spray
*eye drops
*deodorant
*feminine hygiene products
*foot powder
*hand lotion
*hand sanitizer

A great resource if you are looking at adopting a soldier is Any Soldier. You can browse through a list of “wish lists” and select one (or more) to send a package to. There is a huge list of other organizations that are set up to support and send care packages to our troops here.

You can get your entire family involved in this process. Have your kids draw pictures or write short letters to include in your package while you are putting it together.

Also, don’t throw out your expired grocery coupons. You can send them to US military families who are stationed overseas. They are able to use them up to six months past the expiration date. There is a comprehensive list here of places where you can send your expired coupons along with more detailed information about how this works.

SundayBird’s Eye Voila! meal from my Randall’s trip this week – I had good intentions to cook a “real” meal today, but I’m just completely worn out and I stocked up on convenience foods this weekend for a reason, so that’s what we’re having tonight!

MondayCountry Style Pork loin

I’ll be honest. I have never actually cooked pork loin before, but I’m trying to branch out and mix things up a little bit. I have a couple in my freezer that I got for almost free at Kroger a few months ago. So, I posted on the BabyCenter “Cooking for Your Family” board asking for suggestions and got some great ideas! Here’s the recipe I’m trying this week:

Country-Style Pork Loin
Katie (Katiedid) from Taste of Home

1 boneless whole pork loin roast (3 pounds)
1/2 cup all-purpose flour
1 teaspoon onion powder
1 teaspoon ground mustard
2 tablespoons canola oil
2 cups chicken broth
1/4 cup cornstarch
1/4 cup cold water
Hot mashed potatoes, optional

Cut pork roast in half. In a large resealable plastic bag, combine the flour, onion powder and mustard. Add pork, one portion at a time, and shake to coat. In a large skillet, brown pork in oil over medium-high heat on all sides. Transfer to a 5-qt. slow cooker. Pour broth over pork. Cover and cook on low for 5-6 hours or until tender. Remove pork and keep warm. For gravy, strain cooking juices and skim fat; pour 2-1/2 cups cooking juices into a large saucepan. Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice pork; serve with gravy and mashed potatoes if desired. Yield: 8 servings.

*This recipe was SOOOO yummy! Even my kids loved it. It is definitely a keeper at our house!

TuesdayCranberry turkey meatloaf (freezer meal) – This is another meal from the freezer group that I joined. I can’t wait to try it! I have to admit that it has been SO nice to have these meals on hand! I’m sad that I had to miss out on the swap this month, but our group got bigger and I knew I wouldn’t be able to get all of my meals done in time.

WednesdayChicken Parmesan (slow cooker) – I spent some time Saturday night browsing for “new” menu ideas. I got this recipe from the Year of Crockpotting website (if you’re not familiar with her site, you should check it out – she cooked something in the crockpot every day of the year last year!)

ThursdayChicken enchilada casserole – This is a recipe that my sister came up with. She uses canned chicken when she makes it. I came up with a little bit of a variation.

Ingredients:
2 chicken breasts (shredded) – or 1 can chicken
1 large can red enchilada sauce
corn tortillas
shredded cheese

Directions: (this is what I do) – I put my chicken and the enchilada sauce in the crockpot the night before and then shred it when I get up in the morning. If you are using canned chicken, you can just shred it as you are making the casserole. I spread some of the chicken/sauce mixture along the bottom of the casserole dish so it doesn’t stick. Break corn tortillas into four pieces and layer across the bottom of the casserole dish. Spread a layer of the chicken/sauce mixture and cheese. Add another layer of corn tortillas. Continue until you are out of the chicken/sauce mixture. Bake at 350 degrees for 25-30 minutes until the cheese is bubbly.

FridaySloppy joes (freezer meal) – I got this recipe from Christy’s Once a Month Cooking site

Sloppy Joes
-serves 4
1 pound ground beef
1 onion, peeled and finely chopped (I use 1/3 Cup dried minced onion to make it quicker)
1/2 cup ketchup
1 Tablespoon brown sugar
1 Tablespoon vinegar
1 Tablespoon Worcestershire sauce
1 teaspoon brown mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper

TO Freeze: I brown and drain the ground beef, you can either sauté the onion with the beef or just add the minced dried onion without cooking it. I let the ground beef cool, toss in a freezer Ziploc bag, add the minced onion, and all the other ingredients, and freeze.

When you’re ready to eat it, thaw it, and reheat in a pan until it’s warmed up. If you’re just making it without freezing it, you would brown the beef and sauté the onion. Then add all the other ingredients and simmer uncovered for 20 minutes until sauce has thickened and divide between 4 hamburger buns and serve. (We like it over “homemade” bread machine bread, instead of worrying about having hamburger buns around). Nice and easy! I like that! =) Hope you enjoy! =)

SaturdayCountry ham & macaroni casserole

Country Ham and Macaroni Casserole (thanks to baby_hokie on NBBC)

1 lb country ham slices or regular smoked ham in one piece
1 large onion, diced
1 lb elbow macaroni
2 cups shredded extra sharp cheddar cheese (8 oz)
1 cup sour cream
1 can cream of chicken soup
1/4 cup (1/2 stick) margarine, melted
1 cup dry plain bread crumbs

1. Heat oven to 400º.
2. Bring 4 quarts water and ham to boiling in large pot. Once water begins to boil,
remove ham to a plate. Add onion and macaroni to pot. Return water to boiling; cook 8 minutes, stirring occasionally.
3. Coarsely chop ham, discarding any fat and bones.
4. Drain macaroni and onion and return to pot. Add ham, cheese, sour cream and soup. Scrape into a 13x9x2 baking dish. Pour melted margarine over top. Sprinkle with bread crumbs.
5. Bake in heated 400º oven 30 minutes or until heated through and top is golden brown.
Let stand 5 minutes before serving.

Note: Prepare in two 8×8 casserole dishes, bake one and freeze one (unbaked) for another day. If freezing, top with crumbs and margarine right before baking.

Randalls (or Safeway depending on your area) hot deals on frozen items!

Check out your store’s coupon policies. At my store, they will double the face value of one “like” coupon up to .50 and triple the face value of one “like” coupon up to .39.

Fannie has a lot of information and some scenarios here on her blog. A word of caution: check the coupon policies for your area before applying these scenarios. In her area, they double multiple “like” coupons and double coupons with a higher face value.

My $40 weekly grocery budget

This was a big bargain shopping week! Between the bargain shopping and my daughter deciding she needs to wake up at insane hours (it was 3:30 am yesterday and 4:15 today), I’m beat! Here are yesterday’s trips:

Target: 1 bag of Iams dog food, 1 box of Bounce dryer sheets (P&G buy 2, get a $5 gift card promotion), 2 Venus Breeze razors (but 2, get a $5 gift card promotion), 2 1 GB USB drives (buy 2, get a $5 gift card promotion), 2 bags Flat Earth chips, 10 bags Milk Bone dog treats, 1 bag Puperoni dog treats, 15 boxes 12 ct Pop Tarts (Kellogg’s buy 5, get a $5 gift card promotion – did this three times on two different trips to two different stores), Disney Cars cell phone (impulse buy for my son’s Easter basket) – was $44.83 OOP (paid for $9.75 w/ gift cards), earned $20 in gift cards – none of this came out of my monthly grocery budget (the Pop Tarts were paid for using gift cards)

Randalls: 3 Bird’s Eye Voila frozen meals (used 3 $1 off coupons), 1 bag Safeway brand Southern Style frozen potatoes, 3 boxes Lean Pockets (used $1/3 catalina), 5 boxes Hot Pockets (used $1/3 catalina), 1 box Eggos, 3 boxes Kelloggs Frosted Mini Wheats (used .99 in store coupon and .70/1 Kelloggs coupon), 1 Freschetta pizza (used $1 coupon), 4 Tony’s pizzas, 2 cartons Dreyer’s ice cream, 1 box Pasta Roni, 10 cans Purina One dog food (used FREE coupons), 2 gallons milk, 2 cartons eggs, bananas, tomatoes, zucchini, carrots, strawberries, 1 pork loin, 1 beef roast (both the pork loin and beef roast were HUGE and will easily make two meals each for my family!)

Randalls is having a “Chill Out at Home” promotion where you spend $25 on selected frozen food items (the master list is here – it was posted originally on Slick Deals) and you get a $10 catalina back to use on your next purchase. I did three back to back transactions and “rolled” the $10 catalina into the next transaction and the next transaction (I only recommend this if you shop at crazy off hours where there is no one in the store, which is what I did). They also had a $10 off a $50 purchase in this week’s ad (it expired yesterday). If you have an Entertainment book and want to do this deal, you’re not out of luck – there is a $5/50 coupon in there. My total OOP was $48.54 for all of this and I earned 10 cents off each gallon of my next gas purchase, too! My total savings for all three trips combined was $113.95.

**I will get a $5 rebate back from the Bird’s Eye and my Madagascar 2 that I got at CVS a few weeks ago!

Kroger: 6 pouches StarKist tuna, 4 cans Vienna sausage – used 4 $1/1 StarKist coupons from Vocal Point, 1 BOGO StarKist tuna from Vocal Point, and 1 B2GO free coupon from last week’s inserts plus a $1.50 OYNP catalina from the fruit snacks deal a few weeks ago – I thought I was buying enough to cover the overage, but they entered the “free” tuna coupons at $1.39 instead of $1, so they paid me .51 and I also got a catalina for $1 OYNP for buying the tuna

CVS: 2 boxes Carnation Instant breakfast, 2 boxes SlimQuick, 2 bottles Vitamin 2, 2 bottles Act mouthwash, 2 Gillette Fusion razors – total OOP = $0 (rolled ECBs)

I haven’t been good about keeping up with my spreadsheet with my savings at individual stores, so I think I’m just going to start posting what I have saved for the week.

Technically, I went over budget by $8.54 this week, but I only spent $1.99 of my $40 last week, and I keep that money in a fund for times when I need “extras” which definitely came in handy this week 🙂
