In case you missed it last week, this recipe for Bubble Crust Pizza was a HIT!  I loved it because it was kid friendly and my kids helped to make it!

SUNDAY: After a busy week with family in town, we just had sandwiches for dinner, but I’m sharing the recipe for Easy Sausage & Cheese Breakfast bites, which is what we had for breakfast.  It was super yummy and you only need 3 ingredients!

MONDAY:  Slow Cooker Cream Cheese Chicken – This is a family favorite and it’s been quite awhile since I made it, so I’m making it tonight.  For a change, I’m going to try serving it over bowtie pasta instead of spiral noodles, which is what I usually do.

TUESDAY:  Pork sammies (slow cooker) – I got an awesome deal on pork roast and I’ve got plenty of BBQ sauce, so I thought this would be a cheap and easy meal.

Ingredients:
2-3 lbs. boneless pork roast
2 onions, chopped
12 oz. BBQ sauce of your choice
1/4 c. honey
rolls

Directions:

Place meat in slow cooker. Add onions, bbq sauce and honey. Cover and cook on low for 6-8 hours. At that time the pork should break apart easily and shred with a couple of forks. After you shred it, serve it on rolls.

*Serving suggestion! Place provolone cheese slices on bolillo rolls along with mayonnaise. Toast the rolls open faced with cheese and mayo in a 350 degree oven for about 5-6 minutes before adding the pork and serving.

WEDNESDAY:  Chicken BLT taco salad – I got this in an e-mail from Betty Crocker recently and it sounded so yummy that I added it to my “must try” list

I saw this recipe on Pinterest and had to check it out.  First, it only has 3 ingredients, so how can you go wrong?  PLUS, it has sausage, cheese, and crescent rolls…3 things my family loves!  So again, how can you go wrong?  I made this for breakfast for our family yesterday and everyone gave it two thumbs up!  It was SUPER easy to make, too, which is always a plus for me!  This is a great one for Sunday mornings and would even be great for a Christmas morning breakfast!

Easy Sausage & Cheese Breakfast Bites

Easy Sausage & Cheese Breakfast Bites

Serves: 8-10
 

Easy Sausage & Cheese breakfast with only 3 ingredients!
Ingredients
  • 1 lb breakfast sausage
  • 1 8 oz package cream cheese (I use ⅓ less fat variety)
  • 2 package crescent rolls (I use reduced fat)

Instructions
  1. Brown the sausage in a pan and then drain. Add in cream cheese and cook until the cream cheese is melted and well mixed.
  2. While the sausage is cooking, preheat the oven to 375 and layer a cookie sheet with aluminum foil (you don’t HAVE to do this, but it makes life easier). Unroll the first crescent roll package in the center of the cookie sheet.
  3. Spread the sausage mixture over the crescent rolls. Leave a border around the edges so you can “seal” it.
  4. Once you have the sausage mixture spread out, unroll the second package of crescent rolls over the top and press it to seal.
  5. Bake at 375 degrees for 20 minutes.
  6. Cut into squares and serve.

Moody Gardens Hotel Review

Here are five things we love about the Moody Gardens Hotel:

The rooms – You can get rooms with a King bed or 2 Queen beds.  The rooms include a mini refrigerator (which is always a plus for us) along with a Keurig brewer and an in-room safe.  The best part of the accommodations is the views!  You have beautiful views of the island or of the Moody Gardens Pyramids.  During the holidays, we loved the view of the pyramids because we could see all of the Festival of Lights displays.  During the summer months, we like the island view, and it makes it easy to access the pool, too!

The pool – My kids LOVE to swim, and they loved this pool!  It’s huge and there is a waterfall, which was an added bonus for them!  There is plenty of seating around the pool including cabanas and poolside beds.  There is also a poolside cafe, and they will bring your food right to you (plus you can charge it to your room).  Adults will love the swim-up bar.  We found that the pool got a little bit less kid and family friendly later in the evening.  If you’re trying to stay in shape, there is also a heated lap pool.

Kids Crew – If you’ve got time, let your kids unwind and check out the Kids Crew.  They have different activities each day and you can pick up a schedule of the day’s events at the front desk or you can view it online.  On our last visit, the S’mores were a huge hit.  They have a bounce house and other activities like face painting, Wii challenges, and scavenger hunts.  Your kids will never be bored!

Special Events – Moody Gardens knows how to celebrate the holidays!  I surprised my kids this year with a getaway right before Christmas that included a dinner show and a trip to the Festival of Lights.  At check-in, they got special holiday-themed bags and when we returned from the evening festivities, they also had stockings filled with goodies on their pillows! There were several large, beautifully decorated trees, and a huge electric train set, too.  They have special events throughout the year, and they are definitely worth checking out.  The Christmas getaway will be a new family tradition for us!

Other Amenities – You can take a shuttle to and from Moody Gardens.  If your kids aren’t run down after a day at Moody Gardens, there is a park located between the hotel and Moody Gardens.  Have a picnic or just let them burn off some extra energy!
